Vegan Linguine with Tomato-Pesto Sauce
Ingredients you will need:
2 cups packed fresh basil leaves
¼ cup pine nuts, toasted
¼ cup extra-virgin olive oil
4 large cloves garlic, finely chopped
½ teaspoon coarse salt
A pinch of cayenne, or to taste, Freshly ground black pepper.
12 ounces linguine
1lb vine-ripened tomatoes, peeled, seeded, and chopped
- Place the basil, pine nuts, oil, garlic, salt, cayenne, and pepper in a food processor fitted with the metal blade or in a blender. Process or blend until smooth and well combined, Set aside.
- Meanwhile, cook the pasta according to package directions until al dente; drain well. Transfer to large bowl and immediately add the basil mixture and tomatoes; toss well to combine. Serve at once.
